Style

To achieve its signature color, the hand-harvested grapes undergo a slow, exceptionally gentle pneumatic pressing, extracting only the finest, minimally colored free-run juice before primary fermentation in temperature-controlled stainless steel tanks. Following the blend assembly, the secondary fermentation takes place entirely inside the estate's damp, naturally cool underground limestone caves. The wine is aged on its fine lees on laths (sur lattes) for 9 to 15 months, building out a supple, creamy texture without overpowering the varietal character. It is finished with a intentionally low dosage to keep the pure, crisp personality of the Cabernet Franc center stage.
