Tasting notes
Based on 60% Pinot Noir and the rest Chardonnay, with 17% raised in barrels, the 2008 Champagne Nicolas François spent more than 150 months on its lees, with 2.9 grams per liter dosage. It pours a rich straw hue and is layered and long with aromas of truffle, apricot, croissant, floral orange blossoms, and marmalade. Full-bodied, it’s supple in texture, with a rounded mousse, and has a long-lasting, mouthwatering finish. Exceptionally well-balanced, it comes together seamlessly on the finish. This will be a wine to enjoy over the next three decades.
More about this wine
Created in 1964 as a tribute to the House’s founder, Billecart-Salmon's "Cuvée Nicolas François" is a legendary Prestige Cuvée that represents the absolute pinnacle of traditional Champagne mastery. While Billecart-Salmon is globally famous for its iconic rosé, this exceptional bottling is the true insider's choice, celebrated for its vinous power, extreme precision, and brilliant ageability. It is crafted exclusively from the most prestigious Grand Cru vineyards, balancing the structural authority of Pinot Noir with the chiseled elegance of Chardonnay. The 2008 vintage is universally regarded as a historic, once-in-a-generation masterclass for Champagne—characterized by a cool growing season that preserved jaw-dropping, electric acidity alongside optimal phenolic ripeness. This bottling stands as an absolute monument for the house, pairing an incredibly rich autolytic complexity with a breathtaking, linear, and crystalline laser focus.
Grape Varietal
An elite, classically proportioned Champagne assembly composed of 60% Pinot Noir and 40% Chardonnay.
> Note: The Pinot Noir is sourced entirely from the historic Grand Crus of the Montagne de Reims (such as Ambonnay, Bouzy, and Verzenay), providing the muscular vinous backbone, while the Chardonnay comes from the iconic Grand Crus of the Côte des Blancs (Mesnil-sur-Oger, Chouilly, and Cramant) to inject pure, chalky mineral tension.
Region
Champagne AOP, Montagne de Reims and Côte des Blancs, France.
Style
Sparkling Wine: Dry, Medium-to-Full Bodied, Tensile, and Aristocratic. This Cuvée is a textbook display of non-compromised craftsmanship. To achieve a majestic balance between tension and vinous depth, 83% of the blend was vinified in traditional stainless steel tanks, while 17% was fermented in old oak barrels to impart a subtle, creamy complexity without introducing overt wood flavors. True to the strict Billecart methodology, the base wines underwent partial malolactic fermentation to preserve a fierce, vibrant skeleton. After spending an extraordinary 12.5 years aging on its lees in the house's cold, historic chalk cellars, it was finished with an ultra-precise, low dosage of 2.9g/L (Extra Brut territory).
Color
A striking, brilliant Deep Straw-Gold with shimmering amber highlights and an incredibly persistent, ultra-fine stream of needle-point bubbles forming a perfect, dense collar.
Aroma
The nose is "magisterial, intensely chiseled, and boundlessly deep," opening with a breathtaking harmony between youthful mineral tension and mature autolytic indulgence. Key aromas include:
Primary Fruit & Citrus: Intense bursts of preserved lemon peel, crisp Granny Smith apple, yellow orchard fruits, and dried orange pith.
Autolytic & Pastry: Decadent layers of freshly baked brioche, roasted hazelnuts, marzipan, warm almond croissant, and buttered toast.
Terroir & Mineral: A dominating, pure backbone of crushed chalk, sea spray, iodine, and white smoke.
Flavor
On the palate, the 2008 Nicolas François is monumental, razor-sharp, and full of kinetic energy. It commands the mouth with a taut, explosive attack of lemon curd, white peach pulp, and fresh ginger root, leading into a deeply layered, vinous mid-palate showing flavors of tarte tatin, dried apricots, and salted caramel. Driven by its pure Grand Cru limestone origins and the legendary 2008 climate, an electrifying backbone of laser-like acidity and intense chalky minerality cuts right through the wine's rich, pillowy texture. The mouthfeel is exceptionally vertical and precise, maintaining an ethereal weightlessness despite its immense concentration. The finish is seemingly endless, leaving a long, clean imprint of fleur de sel, smoky minerals, and fresh honey.
Food Pairing
Its profound autolytic complexity, low dosage, and intense mineral spine allow it to complement luxury ingredients, coastal seafood, and elevated, savory cuisines.
Seafood Decadence: Pan-seared sea scallops with a white truffle foam, butter-poached lobster tails, turbot cooked on the bone, or an elite caviar service.
Poultry & Light Meats: Roasted Bresse chicken in a light tarragon cream sauce, veal chops with wild chanterelle mushrooms, or a rich sweetbread ragout.
Earthy Comforts: Wood-fired dishes heavily highlighting shaved white truffles, wild mushroom risottos, or a rich duck confit.
Cheese: Hard, mature cheeses such as aged Comté (24+ months), Parmigiano-Reggiano, or extra-sharp artisanal white Cheddars.
Overall
The 2008 Billecart-Salmon "Cuvée Nicolas François" is an absolute "masterpiece of the vintage," widely recognized by global critics as one of the single greatest Champagnes ever engineered by the house. It achieved spectacular critical acclaim across the board, securing monumental scores including a 99-point rating from William Kelley (Robert Parker's Wine Advocate), a 99-point score from Antonio Galloni (Vinous), and 98 points from Wine Spectator, which praised its breathtaking completion, laser-focused precision, and epic longevity. It is an uncompromised, collector-grade sparkling wine built for the ages. While its pristine fruit dominance and fine mousse make it an unforgettable experience to pop open today, its incredible structural chemistry will ensure it ages with aristocratic grace. It has entered its prime drinking window and will continue to cellar beautifully through 2058+.
